Buffalo Chicken Enchiladas with Creamy Ranch Sauce

Buffalo Chicken Enchiladas with Creamy Ranch Sauce
*I got this recipe online, but changed a few things around to suit us!
What you need:
1 can  Condensed cream of chicken soup
1/2 cup ranch dressing and 1/2 cup low fat sour cream, mixed together (this is your 'dip')
2 cups chopped cooked chicken
Frank's Red Hot Sauce
Honey BBQ sauce
4 flour tortillas (6 inch)
3 cups shredded cheddar cheese (12 oz)
jalapenos
How to Make:
1) Preheat oven to 350. Spray 13x9 in baking dish with cooking spray. in medium bowl mix soup and dip. In large bowl mix chicken and hot sauce. Mix in as much as you can handle! Then coat with a little bit of BBQ sauce.
2) Spoon in soup mix down center of tortilla set extra sauce aside. Then place chicken mixture over, cheese, jalapenos. Wrap with seam facing down and place into pan.  Cover with remaining soup mix and cheese.
3) Cover dish tightly with foil. Bake 40 to 45 minutes or until hot & bubbly.

Misc. Monday

Today's my first time linking up with lowercase letters for Miscellany Monday!
{one} My great husband put our slightly ghetto crib up last night! While we are waiting for the headboard to come in {without a chip in it}, he went ahead and put up the one we have in the room to get the room looking better! I'm so happy! We both couldn't stand looking at that huge box anymore!

{two} I've kept up with my Summer Goal ~ which was to try and do one load of laundry a day.  If you've been following for a while, you know I HATE LAUNDRY. I hate the process it entails. So, I set out to do one load of laundry along with folding it and putting it away {for most of you that goes with it, for me, that's the extra step, ha!}. I've been doing pretty well! Come 2 weeks...not sure if I'll have the same energy with work!

{three} Cinnamon Melts from McDonald's.  Have you had them? They are amazing! A must try for sure. I also had my first COKE since I found out I was pregnant. I had a kid's small from McDonald's. No judging please. It was the highlight of my week last week.
{four} Anyone have any good 4th grade or intermediate teaching blogs to share? I've found lots of first grade ones or primary ones, but I need some inspiration for the older kids! Please share to my email or comments if you do! :)

{five} I finally finished my one big project for baby girl's room! I love the way it looks! Here is a sneak peek and a tutorial will be coming soon!

Big Rich Texas

So...did anyone else catch this show tonight on the Style Network?

I was kind of excited about it because I felt like it was going to be like my bad obsession ~ all the Real Housewives. But to my dismay, it did not fulfill me. :(

Anyone else watch it? Like it or Hate it?

The ladies were more snotty than the other women of RH {gasp, I know} and they had nothing interesting to do or say. They were totally scripted, in a bad way, and you could tell.

While I may not be totally turned off from giving it another chance, it hasn't made my DVR list just yet... :)

28 & 29 :)

Whoops! I skipped the 28th bump update. I'm sure you all were just dying to read it...HAHA.

I'm 7 months preggo and we're working on week 30 as I type!

Not much changed between the two weeks {except for my weight:)}.

I'll just share the neat things Harper is doing and what's developed in the past 2 weeks and keep this Pregnancy Update short and sweet.

Harper's Movements: My girl is a wiggly worm! Her Daddy says she takes after her Mom in that respect. :) She's constantly moving and I truly love it.  It is soooo neat to feel her at all times of the day and even the night! She's been consistent since I could first feel her staying on the right side.  I am determined that she's finally moved up a bit because I feel her move against my ribs, but I also don't feel like I have to hold up my uterus like I had been feeling for so many weeks.  I guess we'll find out this Thursday when we get to have another u/s.  She sort of 'runs' from one side to another and if you catch it on my belly it's amazing to see!

Kick Counts: On my 28th week I had to start the Kick Counts chart. I was really nervous about this because it sort of seems intense.  I have to record a time frame every day and see how long it takes her to kick (move, turn, etc.) 10 times until I deliver. They would like it to take less than 2 hours.  Well, let me tell you! She certainly makes this easy on her anxious Mom! I can usually get all kicks in from about 6:00am to 6:30am! Sometimes I wait to do it in the afternoon just to make sure everything is going alright, but it hasn't been that big of a problem, yet.  She might sleep more once I'm working - who knows! I bet my new students will be in for a show a time or two watching her jet out of my belly a little! ha!

What's Developing: This week she's as big as a cabbage! Baby's brain isn't smooth anymore - which is a good thing! She's got grooves and indentations from getting more brain tissue.  Also, baby has bone marrow which will help her survive when she comes out of the womb.  She's also getting fatter :) which is the reason why it (What to Expect App) says my uterus is ginormous!

What's Happening with Me: I've got heartburn bad!! Friday night around 9:00 I was craving wings, so we went to BW3's! I paid for it by being up from 4-6 with heartburn! Funny thing is the App told me I was about to have heartburn really bad this last leg of pregnancy due to some changes going on in there! It was right on cue! :) I'm actually feeling pretty good but I also realize that's probably due to not being back to work yet.  Still not sleeping, etc., but it's ok! I can't believe we only have 10 more weeks to go! Yikes!

Nursery Update: So...as always, something has to go wrong!!! :( The crib is STILL NOT IN. To make a long story short, the company lied when they told us they ordered it and it would be in in 2 weeks. Because it's not. And when I called they said it was out of stock and they won't be re-ordering it. WHAT? I. WENT. OFF.  I asked to speak to the manager. He told me I needed to calm down. Let's just say you don't need to tell a 7 month OCD preggo that. So I went off again.  Supposedly they've called the actual furniture company and have the crib being shipped to us. I don't know. I went there again today to check that that was the actual truth, and supposedly it is. I guess we will see... Who knows. Good Things: I made her big thing for her room and will be showing it soon, we've got it painted, and we are just waiting on a few personalized items to get finished and her nursery chair.

*please don't tell me 'it's ok if it's not finished she won't know' because I will know and I am way too OCD for this craziness! plus, who has time to work on the nursery after the baby?!?!*

My Today :)

Can I really write that I am so tired from shopping around at Kohl's with my Mom and Target? Well, I just did. Is this a sign of laziness or 3rd trimester whoas? Who knows! :)

I've been working on my one major crafty thing for Harper's room and it's freaking me out! Therefore, it's become a very slow project...I'm hoping to share it by the end of next week...since in May my goal was to have it complete before I go back to school!

On that note...SHEESH! The summer is flying by! I feel like I just got into summer! Anyone else feel like this summer has flown? I feel like I've been busy, but I'm not exactly sure how or what has caused me to be busy?! I did go check out the Dollar Bin at Target and unfortunately bought some stuff for the classroom *even though* I said I wasn't going to buy things this year. Oh well...it gets me every time! I'm stressing a little bit about how I'm going to get those heavy boxes my kids packed and put away  down and unpacked considering my school closes at 3:00 and won't let you come in at night, so I guess Brian's out?! Oh well, trying to remember I don't have to worry about that until August 1! :)  I do love organizing and getting my classroom set up and the clean, new feeling it has for about a day until the little ones come, but I have a feeling this year will be more angst than anything getting it ready!

Brian's Baby Shower!

So, we were really spoiled this weekend in celebrating Harper!
Brian's co-workers threw us a baby shower on Friday! He works with about 5 other people in a bank. They decided to invite other co-workers in the bank, too! How sweet!

We had the shower the last couple of hours of their work day and it was so much fun! He works with some great people!

Celebrating Harper Alan ~ Baby Shower!

WOW! What a fun weekend we had! Not only was it Brian's 30th Birthday, but we had 2 showers to celebrate Harper!!!  I have sooo been looking forward to my friend's throwing me a baby shower! They had it planned for a couple of months and I have been counting down the days! Baby showers are a lot different than wedding showers to me.  They are a little more comfortable in the fact that people are buying someone else gifts.  You know what I mean? I don't know, all I know is it was an absolute blast!! {I'll share the other one is another post!}

My friends Amanda, Allison, Mandy, and Jordan threw me a Friends Shower on Saturday morning.  They seriously had the best food ever and the decorations were adorable!!

We also played a super fun game, compliments of Mandy! She had a big bag filled with lots of adorable baby socks ranging in all different sizes {good thinking girl!}.  You had to match the socks and fold them in 45 seconds! It was SO much harder than it sounds! Whoever folded the most matched socks won! Amanda S. won the game ~ even with her little boy there! ha! She must be super-laundry girl. *Must get tips*  The best part of the game was that Harper got all the socks after it was over!!

My friends truly spoiled me! Harper got so many cool, cute, and neat things! I've got tons of pictures, but I don't want to bore you with every single gift, so I'll just share a few. :)  It was funny at times because I didn't know what some of the baby things were for! Oh well, I guess I'll learn!!




B wasn't at the shower, but he was pumped about putting together the travel system - which we did the next night!
We had a great time laughing the entire shower {I think mostly at me, ha!} and it could not have been more fun! I didn't want it to end!! *We even had a cop show up towards the end of the shower. One of the girls thought it was a STRIPPER! HAHAHA  If you knew some of my girlfriends from college, this wasn't such a weird response! But alas, it was a real cop telling people to move their cars off the street. BOO on crabby neighbors!

30th Birthday!!

Happy 30th Birthday, Brian!

Thursday was my hubby's 30th! I seriously cannot believe that! We started thinking back to when we first started dating and he was 26...I feel like we'd never get to 30! ha! However, he's dealing with it very well and excited for what this next year has to bring!

We started off his actual Birthday by going to The Cellar for dinner, followed by birthday presents and brownie fudge! He started his birthday off with a candy bouquet to take to work to munch on!







On Saturday, he went golfing with his buddies all day and then we all headed out for the night! Although we used to go out all the time, we haven't in a LONG time, so it was fun! We had dinner at Atomic Cafe {a fun outdoor place with live reggae music} and then headed to Tin Roof! They had a country band who played 'old country' and Brian was sooo happy! He even got to stare at Darius Miller {UK bball player} so he was super pumped! haha And....this little 7-month-pregnant-wife gets a major award, because I outlasted all the guys and girls at his party! ha! We seriously stayed out until 1:30am.  That's late for me!! 







*Meahnwhile, at the bar, I'm sitting with my feet propped up on the bench behind my husband and his friends discussing with another one of the wives (Alison) about my swollen legs with dimple things and we were freaking out that the dimples wouldn't go away the next day.... {don't worry, they did!} A hot young girl approaches my husband and her husband and begins to stroke their ring fingers asking if they were married (no, boys just like to look taken who aren't???) and if they were HAPPY! Dang slut! {whoops}.  Although Alison and I found it to be comical for a second, we about had to do something until we saw the boys quickly get her away and look franctically at us to see if we noticed! HAHA Wow, talk about making a prego girl feel down on herself - and the conversation we were having was icing on the cake! But, I think Brian liked it :).  He kept telling me he 'still had it at 30', HAHA!

On Sunday, Brian celebrated his birthday with my family after church with lunch at his choice and brownies again! Colby is way into parties right now and has been talking and looking forward to having "Uncle B's party" for a while now! He helped make the brownies with my parents so Kelli and Eric could go out with us, and he made B a party hat! haha It was funny.
